How to defrost fish quickly
We completely understand that situation when you're hungry, or you have to prepare a meal for your children, and the fish is still frozen. Let's look at the best ways to defrost oily and white fish quickly without compromising their flavor or texture.
1. Cold water method (most recommended)
- Place the fish in a sealed plastic bag if it is not already packaged.
- Immerse the bag in a container with cold tap water
- Change the water every 30 minutes to keep it cold
- A medium steak usually defrosts in about 1 hour.
Tip : If you're in a real hurry, put the container under a stream of cold tap water to keep it circulating (but don't use hot water!).

2. Microwave method (for emergencies)
- Use the “defrost” function or low power (300 W)
- Program short times (30 seconds) and check them.
- Turn the fish halfway through the process.
- Cook it immediately afterward to avoid bacterial growth.
Tip : If you see the edges starting to turn opaque (a sign of cooking), stop immediately and use those parts right away.

3. Direct defrosting during cooking
- Some fish can be cooked directly from frozen.
- Add a few extra minutes to the normal cooking time
- Works well for baking, steaming or en papillote
- Not recommended for frying (it splashes a lot) or for very thick pieces
4. Defrost in the refrigerator (Slower, but safer)
We know you're looking for speed, but we mention this method in case you have a couple of hours and want the best quality.
- Place the frozen fish on a plate or container to avoid dripping.
- Put it in the lower part of the refrigerator (where it is coldest)
- A medium steak will need approximately 12-24 hours to fully thaw.
- Thicker fillets or whole fish may need up to 24-48 hours

- Hot water, prohibited!:Although it may seem like a good idea to go faster, it will cook parts of the fish and ruin it.
- Separate the filletsIf they are stuck together, try separating them before defrosting to make it go faster.
- Cook soonOnce thawed, don't wait; cook it immediately so it's fresh and delicious.
