How to make razor clams in the pan

  1. If you have frozen razor clams, you can skip to step 2. If they're fresh, start by cleaning them (if necessary) as explained above. Rinse them with cold water and leave them in a bowl with water and a handful of salt for a couple of hours (a little less time is fine, but at least 30 minutes). Change the water and rinse them a couple of times.
  2. In a large skillet, add a splash of extra virgin olive oil and heat over medium-high heat. Add the razor clams. 
  3. While they're cooking, prepare the mash. Add the chopped garlic to the mortar, along with a pinch of salt, parsley, and a squeeze of lemon. Mash well until everything is combined into a single sauce.
  4. Just before finishing cooking the razor clams, add the garlic and parsley mixture. This will help the razor clams finish cooking and be ready to remove from the grill.
