What is ultra-freezing?
Ultra-freezing is a process for preserving food by exposing it to extremely low temperatures, hovering around the -40ºC or lower.
At such a low temperature, the water present in food freezes so quickly that microcrystals form instead of large ice crystals.
This results in less cellular damage to the food, preserving the texture, flavor, and all the nutrients in the food.
This method of food preservation is the most effective for keeping foods fresh and nutritionally complete.

How to properly defrost frozen food?
The ideal process for defrosting frozen food is to gradually lower its temperature and not abruptly break the cold chain.
First, we remove the ultra-frozen food from the freezer and we put it in the coldest part of the refrigerator. Normally, it is the bottom shelf of the refrigerator.
It must be kept there for at least 12 hours to completely defrost.
Afterwards, we will keep it at room temperature for let it come to room temperature for at least half an hour before cooking.
