How to make Baked Prawns with Garlic and Parsley, step by step

Preheat the oven: Preheat oven to 200°C (400°F).

Prepare the prawns: Wash the prawns and dry them well with absorbent paper.

Prepare the pounded mixture or picada:

  1. In a mortar, mix the chopped garlic, olive oil, parsley, lime juice, and salt.
  2. Grind all the ingredients thoroughly with a mortar and pestle until well combined. The final result should be a thick, yellowish-green sauce that can be poured over the prawns.

We paint the prawns:

  1. Pour a little extra virgin olive oil onto the bottom of the baking sheet to prevent it from sticking. Do this if you're not using baking paper or aluminum foil.
  2. We place the prawns on the baking sheet, leaving space between them so they cook thoroughly.
  3. We pour the mixture over the prawns, making sure they are well covered and soaked in the sauce.
  4. We mix gently so that the mixture is distributed evenly.

Bake:

  1. We bake for approximately 7 minutes.
  2. Halfway through baking, we turn them over.

How do you know if Baked Prawns are cooked?

To know if the baked prawns are cooked, you can look at several details:

  1. Color change: Shrimp meat goes from translucent to opaque and takes on a pinkish or reddish hue when cooked.

  2. Tail shape: The tail usually curls slightly when well cooked.

  3. Texture: The meat should feel firm to the touch, but not tough or rubbery. If it's still very tender, it may need a little more time; if it feels excessively tough, it's probably overcooked.

  4. Internal temperature (optional): If you have a cooking thermometer, the internal temperature should reach approximately 60–63°C to ensure they are cooked properly.

Is it necessary to remove the shell before baking?

It's not necessary, but you can do so if you prefer. The shell helps keep the shrimp juicy and adds more flavor. If you peel them first, reduce the cooking time to prevent them from drying out.

Can frozen prawns be cooked?

It's best to thaw them before baking so they cook evenly. If you bake them from frozen, they may release too much water and be less flavorful.

How long can I store leftover baked prawns?

If you have leftover cooked prawns, store them in an airtight container in the refrigerator for up to 2 days. To reheat them, use a pan over medium heat with a little oil or butter, but avoid the microwave, as this can dry them out.
